Almond Butter Mocha Fudge

Almond butter and meal are great nutritional foods that can easily and inexpensively be made in your own kitchen with a few basic tools.  Here's a great link on the steps to get started making your own, you can also purchase either at most grocery stores these days as well.     

The fudge I made here can have several variations to suit your tastes.  Here's one version I made today:

1/2 C unsweetened chocolate, melted
10 soaked until softened (pitted) dates
1 C almond butter (or other nut butter including peanut)
1 tsp. vanilla extract
1/4 C coconut oil    
1/4 - 1/3 C almond milk or soy (vanilla would be even better)

1/4 C instant coffee or coffee substitute grounds ( I used Cafix)

1/2 C walnuts chopped
Blend all ingredients in a food processor adding enough milk to smooth and scrapping down the sides 3 - 4 times.  Add enough milk until the mixture has a gloss and looks like frosting.
Stir in nuts and then pour fudge into a greased plate or pan. 
Cover and cool in the fridge for at least 2 hours to firm up.  Cut into small pieces.  Dust with Cocoa powder and store in fridge to keep longer.


  1. Howdy! I was so excited to read your ingredient was ok for me to eat! Really tasty and fun to serve a safe fudge. Mine turned out to resemble the infamous tootsie roll. The texture and color were just as the candy is. I did not add the coffee you suggested, but did the rest as instructed. So, tell me is your batch more fudge like? Or like mine...tootsie fudge? Thanks again for the great recipe. It was still a smashing success! You bet your tootsie's it was!

  2. Hi and thanks so much for asking and letting me know what your fudge was like. Mine was like soft fudge/ similar to hard cake icing. I kept it in the fridge or it would have been too soft. The "Cafix" gounds (coffee substitute) in mine may have changed the consitancy slightly. Did you keep your's cold as well. Tootsie rolls are always good at least.
