The fudge I made here can have several variations to suit your tastes. Here's one version I made today:
1/2 C unsweetened chocolate, melted
10 soaked until softened (pitted) dates
1 C almond butter (or other nut butter including peanut)
1 tsp. vanilla extract
1/4 - 1/3 C almond milk or soy (vanilla would be even better)
1/2 C walnuts chopped
Cover and cool in the fridge for at least 2 hours to firm up. Cut into small pieces. Dust with Cocoa powder and store in fridge to keep longer.
