Vegan Blueberry Cheesecake w/ Macadamia Nut & Berry Topping

Adapted from a Berry No-Bake Cheesecake on Sweet & Healthy Living.
 This is the first time I've used the NuNatural's product:
 I can say now that I'll be using it again, and again, and again now.

I was a little concerned that the powdered Stevia would be bitter or not sweet enough for the cake.
Especially because there are no other 'sweet' ingredients except the dates.

It was neither bitter nor unsweet, it was perfection.

The Stevia held the no-bake cake together well and gave the berries a great sweetness.
I would compare the taste to a Blueberry Cream Pie!
Yum...........
So how can you make this wonderful Dairy, Sugar and Gluten free Cheesecake?
Wash off your fresh blueberries but air dry them before
using them in this recipe so they don't add a lot of water.


This is the cheesecake batter before adding in the blueberries. It will be less
smooth than dairy cheesecakes but taste even better ((I think)
This is the final cheesecake batter layer being spread on.
Fresh blueberries were dropped on throughout each layer.
See difference here between the 'blueberry flavored' batter and the plain.
Rough chop the nuts, you don't want them too crumby like dust.

Blueberry Cheesecake with Macadamia Nut & Berry Topping

Vegan, Dairy and Gluten Free

Crust
This recipe is basically the Raw Caramels shown here
1 Cup Raw Unsalted Sunflower Seeds
15 Pitted Medjool Dates
2 Tbs. Olive Oil
1/4 Cup Cocoa Powder
1 Tbs. Finely Ground Coffee or substitute like Cafix

Pulse Sunflower Seeds until pulverized. Add in the dates
and pulse until lumpy batter forms. Add in other ingredients and
continue pulsing until smooth.  Chill for 30 minutes and then press
into bottom of springform pan to about 1/2 inch thickness. 
Freeze until firm.

Cheesecake Filling
2 Cups of Cashews - soaked 2 - 8 hours in filtered water, drained
1 Cup of Chopped Dates soaked 30 minutes and drained
1/4 Cup Lemon Juice
1/3 Cup melted Coconut Oil
Pulse all ingredients until a smooth batter is obtained, scrape down sides of blender

Add in:
1/3 Cup Nut Milk of choice
8 oz. Non Dairy Cream Cheese like Tofutti brand
1/2 tsp. Vanilla Extract
Pulse together with first ingredients until smooth
To have a Blueberry Flavored layer to the cheesecake:
Seperate out 2 cups of the batter and set aside.
Add 1 Cup of fresh Blueberries in with the remaining batter and pulse until smooth

To assemble the cheesecake:
Remove the chilled crust in the springform pan and set on an even surface.
Spoon out enough of the set aside, non blueberry flavored batter to cover the
bottom crust about 1/2 Inch thick.
Freeze 30 minutes to firm batter again.

When cake is firm, add spoonfuls of the blueberry flavored batter in different
areas of cake on top of first layer of plain flavored batter using about 1 cup of
blueberry flavored batter.
Spoon the remaining plain flavor batter inbetween the blueberry batter and on top of
the fresh blueberries.
Sprinkle of few fresh blueberries on top of the batter.
Spoon the remaining plain flavor batter inbetween the blueberry batter
and on top of the fresh blueberries.
Freeze again.
Pour on remaining Blueberry flavored batter over entire cake and smooth to
cover the previous layers.
Freeze at least 5 hours until whole cake is solid.

Topping
1 Cup of Macadamia Nuts, roughly chopped (see picture)
1/2 Cup Fresh Blueberries
1/2 Cup Fresh Raspberries

Top the firm frozen cake with berries and nuts - pressing down lightly to top the cake.
Freeze again for 1 hour, remove springform pan exterior.
Store in the freezer or cut into slices and freeze slices well wrapped.

This one is a keeper.  Adapt the berries to suit your own likes.

It's a Lemonade Kinda Day...


It got hot here in the East way too quickly this year.  I had such a craving today for a lemon drink that I grew up with.   I had to pick up a few choice lemons and stir up a batch of the best lemon drink you'll ever taste.                                              
This drink is a twist on Ice Tea and Lemonade.  You'll need a jar of Coffee substitute like Cafix Brand.  These coffee substitutes are made from grains, usually barley roasted and sweetened with some molasses. Cafix is delicious hot or cold.  I usually mix some in with my heated Soy milk in the morning.  http://cannedtime.blogspot.com/2012/02/morning-routine.html


Just mix up a pitcher of your favorionade.  Then pour in enough Cafix syrup to turn the lemon aide a deep brown.  Some in my family like to add just a little, I like a lot.........   To make the coffee / Cafix syrup:  heat about 2 cups of water to a boil and then stir in 1/4 cup or so of Cafix.  Stir until the powder dissolves.   You can keep the syrup in the fridge to use for future batches.  Each time you make up some lemonade, just pour in a little syrup to the pitcher and stir.

My husband had never had this drink when we met 18 years ago and now its his favorite too.   Its sweet but has a great secondary taste of hearty roasted grains as well as the sour lemon that is so refreshing on a hot day. 




If you can't find a coffee substitute where you live it is


available at iHerb for about $5 a jar.  Great deal!




I've also purchased it from Whole Foods and

other health food stores.  It's not the only brand,

it's just the one I'm used to getting.  I'm sure

others are similar in taste and ingredients. 

Pero is another popular coffee substitute also

available at iHerb.







Today I tried the new NuNaturals Lemon Flavor Liquid Stevia in my Cafix Lemonade and it worked great. 

A few droppers full in the pitcher was a perfect sweetness and that great lemon taste. 

Sugar Free and delicious!


Try a "fancied up" lemonade next time by adding a touch of coffee substitute syrup to the pitcher. 

You'll never be satisfied with plain lemonade again!

Orange Creamsicle Crunch


Orange Creamsicle Crunch - Sugar and Dairy Free  
(Makes approximately 4 ramekins)   
          
 Crunch    (Combine in a fry pan and stir on low heat until toasted)

1 Cup Steel Cut Oatmeal
1/3 Cup Roasted Salted Sunflower Seed
1 Tbs. Orange Zest
2 Tbs. Organic Coconut Oil
1/2 tsp. (1 dropper full) of New Orange flavor NuNatural's Liquid Stevia


Cream    (Combine all ingredients in a blender until creamy smooth)

1 Large Orange or about 9 - 10 slices
2/3 Cup non dairy cream cheese (I like Tofutti brand)
2/3 Cup non dairy sour cream (again I used Tofutti brand)
4 Tbs. Organic Coconut Oil melted
2/3 Cup Cream substitute  ( I've seen coconut 'cream' but this time I tried an Almond/ Cashew Cream.  Either is fine as long as it's slightly thicker than milk)
To assemble: 

 Pour equal amounts of the cream mixture into
 4 ramekins and chill at least 1 hour until
surface has hardened         
 Then spoon on just enough crumb topping to cover cream.   Store covered in the refrigerator.

This recipe is by far, my favorite I've created this year so far......
The orange and vanilla combination that NuNatural's Stevia creates with a mild sweetness is just heaven. It makes non dairy and sugar free much more bearable. Super easy and not really costly makes it a quick, easy dessert for anyone to enjoy but particularly those trying to eat more healthy desserts. Give it a try, it won't disappoint!
