No Bake Nut Butter Cookies


These no bake cookies are fabulous, healthy and a great project to make with kids (a little messy in the making so little hands would have a ball patting them out)



The ones I made are a direct knock off from Averie Cook's version here http://www.loveveggiesandyoga.com/2011/12/no-bake-cookie-butter-spread-ginger-molasses-cookies.html.

They are just healthy enough to be guilt free and just delicious enough to have all you want to enjoy, cold or warmed.  They really hit the sweet craving for me.

My version only changed a couple of things from Averie's.  But you can see that they are very adaptable to what you like and what you have on hand.

Changes I made from Averie's :

1.  I used Oat Bran Cereal instead of Biscoff cookies
2.  I added 1/4 Cup of Sunflower seeds
3.  I used 4 Tbs. of Coconut Palm Sugar instead of Brown
4.  I added 1/4 Cup of unsweetened Peanut Butter
melted dark chocolate poured into a plastic baggy / then snip off the tip to apply chocolate

She's right, these are perfect with Trader Joe's Cookie Dough Butter but can easily be adapted to other nut butters if you can't get TJ's.

Ginger Amaretto Cookies
They are somewhat similar in taste to these Ginger Amaretto Valentine's Day Cookies


but Averie's version is easier to store and less messy to eat even.  Both are very good in taste though so try which ever or make up your own version!

    Way to eek out the recipe with the remaining cookie butter and nice work with the substitutions you used based on what you had on hand and what works for you. They work for me! :)
