Orange Chocolate Chip Biscotti w/Cinnamon Sugar coating |
Mix together dry ingredients in food processor or mixer:
1 cup almond flour (I made my own but you can use store bought)
1 cup coconut flour (again this was made my grinding unsweetened coconut into a powder like the almonds)
1 tbs. corn starch
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinn.
Stir wet ingredients together and stir into dry:
2 eggs
3/4 cup honey or agave syrup
1/3 cup orange juice
3 tbls orange zest (I've been dehydrating a lot of oranges so I have tons of orange peel to use, this can be adjusted to taste)
Mix in:
3/4 cups cocoa nibs
1/2 cup walnuts
bake 350 18 minutes
cool for 1 hour and slice about 1 inch slices, they will be delicate at this point so slice carefully.
place slices back on cookie sheet on sides and bake another 15 minutes at 300
Cool and drizzle with chocolate or cinnamon sugar, store in air tight container for up to 2 weeks.
