Coco - Nut Bars



Combine ingredients in a food processor or high speed blender and blend until you have a smooth batter like texture:


8 Oz. of dates, soaked for a few hours
8 Oz. of unsweetened dried Cranberries
1/2 Cup Sesame Seeds
3 Tbs. of unsweetened Organic Peanut Butter
1 1/2 Cups unsweetened Organic Shredded Coconut
1 1/2 Cups Flax meal
1 Cup melted Organic Coconut Oil
1 tsp. Cinnamon
1 tsp. Liquid Stevia

Blend in by hand:
1/2 Cup unsweetened Organic Carob Chips
1 Cup broken Walnut pieces

(1 Cup of Sliced Organic Almonds for topping)


Spray a 9 x 9 baking pan with vegetable spray. 
Sprinkle about 1/2 cup of Sliced Almonds on the bottom of the pan.
Pour the blended batter on top of the sliced almonds and push it around to fill the pan.
Sprinkle the remaining sliced almonds on top of the batter and gently press down on them so they stick into the batter.

Chill for at least 3 hours.  Slice to serve.  Store in the refrigerator.
Makes about 16 square bars.

Homemade Flax Milk w/ leftover flax meal
I used up the flax meal in these bars that was left over from my homemade Flax Milk I made today.  The milk is delicious, creamy and very nutritious.  Better than store bought because the concentration of flax to water is higher.  Plus I get to use the meal also.  I made a little over 1 Quart of milk for about .50 cents.
I could store it for adding to Smoothies but it also worked well as a thickener in these bars.





Healthy doesn't have to taste bland or blah!
Flax seed is so good for us, it's hard to believe these bars are actually full of perfect nutrition for your body and full of great taste too!


A great bar to have on hand for breakfast or a snack.  Packed with healthy ingredients, they'll keep you on track with help preventing so many harmfull effects of daily environment on our bodies.

  1. Thanks Dawn. I was kind of surprised that the dates made all that flax meal taste sweet enough to be like cake. Definitely will make these again. Hope you enjoyed St. Patrick's Day!
